During the session, you’ll learn how to level, divide, fill, and professionally ice a sponge cake, using buttercream and sugarpaste to achieve a smooth, flawless finish. While the tutor will explain the process of making ganache and how it’s traditionally used in professional finishing, the cake itself will be coated in buttercream due to ganache’s setting time. You’ll begin by splitting your sponge, filling it with buttercream and jam, and then applying a neat crumb coat. From there, you’ll be guided through techniques to coat your cake with sugarpaste — with a choice of either straight or chamfered edges — and shown how to use smoothers effectively to create a clean, polished look. The fun continues with a range of finishing techniques. You’ll learn how to use Mexican paste to craft delicate ribbons and bows, explore basic texturing methods, and add colour in creative ways to enhance your design. The class will also cover the use of basic cutters and give you tips on how to use colour effectively for striking results. To finish your masterpiece, you’ll create a bespoke wired burst cake topper, choosing from funky stars or flowers to suit your style. You’ll also be shown how to professionally attach ribbon to your cake board for that final polished touch.
